Pepper sauce recipe

Preparation time: Less than 30 minutes

Cooking time: 10 to 30 minutes

2.5ml or half tablespoon vegetable oil. Unsalted butter also may be used.

1 small onion, peeled and finely chopped

150ml dry white wine or red wine

150ml crème fraîche or double cream

2 tablespoons black pepper, freshly ground

1/2 teaspoon Worcester sauce (Worcestershire Sauce)

Salt and freshly ground black pepper to season

Beef/chicken stock ( optional)

Preparation method

Use a wok or a frying pan to heat the oil/butter. Add thinly sliced onions to it. Cook till onions are soft. Add white or red wine as preferred.  Now add Worcester sauce (Worcestershire Sauce). Cook till mixture is reduced to half. Add the crème fraîche and stir well. Now add the freshly ground peppercorns. You may also add beef or chicken stock at this point. Season the sauce with salt and plenty of freshly ground black pepper. Your Black pepper sauce is ready.

2 sirloin steaks at least 1-inch thick (about 250g each)

100 grams baby carrots peeled

100 grams baby fine beans ends trimmed

1 table spoon olive oil

1/2 teaspoon sea salt

2 tablespoon black peppercorn pounded using mortar and pestle

1/2 glass red wine

100 ml beef broth you can cheat by using a small piece of beef stock cube

4 tbsp thickened cream to taste

1/2 teaspoon Worcester sauce (Worcestershire Sauce)

Cornstarch solution made with 1/2 teaspoon cornstarch dissolved in 2 tsp water


The peeled baby carrots and trimmed beans are blanched in boiling water for 3 minutes. Now take them out and put in a icebath for five minutes and drain. Keep aside.
Marinade the pieces of steak with olive oil, crushed black pepper and salt.
Now heat the saucepan till hot and place the steak pieces on the pan. Turn down the heat. Add oil from side if required. Turn them over when done on one side. It takes about 5 minutes to be done.
Place the cooked steaks on a plate.
Now make the pepper sauce in the same pan according to the recipe above. Towards the end, add cornstarch solution to thicken the sauce a bit more.
Also add any liquid remaining from cooking the steak earlier. Arrange cooked steak on a plate with blanched carrots and beans. Spread generously black pepper sauce over the steak and serve immediately.
Recipe 2: Singaporean Chicken with Pepper sauce

1/4 cup soy sauce, light

3 teaspoons soy sauce, dark

1/4 cup rice wine/Sherry

1 tablespoon sugar


500g chicken breast cut in 1/4-inch strips

1/4 cup canola oil

1 tablespoon butter

1 tablespoon fresh ginger, minced

1 tablespoon garlic, minced

1 whole red chilly, minced

1 1/2 cups spring onions or scallions, cut into 1-inch pieces

Sliced red chilly for garnish


Combine all the sauce ingredients and keep aside.
In a wok over medium-high heat, heat oil and butter together. Add the minced ginger, garlic and red chilly; stir-fry until fragrant, but do not brown.
Add the sauce, stirring until it comes to a boil. Add the chicken and continue to stir fry on high heat until chicken is tender, 4 to 5 minutes.
Now remove from heat. Transfer the chicken to a plate.
Make Pepper sauce in the same pan according to the recipe above.
Spread the pepper sauce on the chicken.
Add spring onions to garnish with sliced chilly; serve immediately with steamed rice.

Recipe 3: Stir Fried Pork in Black pepper sauce

1/2 tablespoon sugar

1 teaspoon salt

1/2 tablespoon light soy sauce

1-2 tablespoons corn flour, mixed with 1 tablespoon water

6 boneless pork chops, pounded evenly

1 tablespoon groundnut oil

150ml water

1 teaspoon chicken stock powder

1 tablespoon oyster sauce

1/2 tablespoon black soy sauce

1 tablespoon groundnut oil

2 tablespoons finely diced garlic

1 medium onion, diced

1 teaspoon salt

1/2 green capsicum, diced

2 tablespoons black pepper

2 tablespoons corn flour, mixed with 1 tablespoon of water

1 tablespoon honey


Make a marinade mixture of sugar, salt, soy sauce and corn flour slurry. Marinade the pork chops for 20 minutes.
In a small bowl, mix together the water, chicken stock powder, oyster sauce and black soy sauce to make the sauce. Set aside.
Heat a large frying pan with oil over high heat. Fry the pork chops until brown on both sides. Reduce heat till well cooked.  Set aside.
Fry the garlic and black pepper in oil.
Add the onions with 1 teaspoon salt and fry until soft, about 3-4 minutes. Stir in the green capsicums and sauce then heat through; 1-2 minutes.
Add the corn flour slurry and stir until the sauce is thickened. Turn off the heat and add the honey and pork chops. Mix well and serve.
Recipe 4: Fish with Lime & Black Pepper Sauce

Preparation time: 15 minutes

4 portions of white fish fillets

1 teaspoon grated lime rind

3 tablespoons lime juice (2 limes)

½ table spoon crushed black pepper

1 tablespoon sugar

½ cup white wine (or sweet sherry)


Mix the  lettuce leaves and orange segments
Combine grated lime rind, lime juice, crushed black pepper, sugar and white wine and set aside.
Fry fish fillets on a medium-high heat for 3-4 minutes each side then transfer to serving plate.
Add sauce mix (2) to fry pan and bring to the boil.
Reduce sauce on high heat for 2-3 minutes then spoon over fish.
Garnish with the mix of lettuce leaves and orange segments.
Recipe 5: Kids special Chicken with Pepper sauce

Prep time: 70 minutes

Cook time: 10 minutes

2 Chicken Thighs or Legs boneless and with skin

Spring onion greens, chopped – for garnish

Oil for pan grilling/frying

The Marinade:

1 Tablespoon light soy sauce

A pinch of salt

1 teaspoon brown sugar

2 teaspoon corn flour

10ml water


Wash and rinse the chicken. Remove fat.  Combine all the ingredients for marinade and marinade the chicken. Keep refrigerated for 1 hour. Place outside at room temperature 15 minutes before grilling.
Slice onions; mince garlic, set aside with other sauce ingredients.
Crush the black pepper to a grainy texture.
Heat a non – stick pan or grill pan with just enough oil (2-3 Tablespoon) to grill/fry the chicken till golden brown. Turn around. Repeat.
Meanwhile prepare the sauce in another non stick pan or wok as per above recipe.
Cook till it comes to boil, stir and add the corn flour solution. Stir till the solution thickens a bit.
Pick up the grilled chicken pieces and place them into the simmering, thickening sauce.
Allow to simmer gently till the sauce reduces and creates a lovely coating for the chicken.
Serve hot. Garnish with Spring Onion Greens.
