Steaks are a favorite with all those who love red meat. Beef is a favorite with all red meat lovers. Beef steaks are cooked and served not just at steakhouse and restaurants but also in your kitchen or at a barbecue in the backyard. Out of all the cuts, one of the most likeable and popular cuts of steaks are the Cowboy ribeye. One recipe that is a huge favorite is the "Cowboy Rubbed Rib Eye with Chocolate Stout Pan Sauce". To make it you will require:

1 or 2 Cowboy Ribeye Steaks
2 tablespoons of kosher salt
1 tablespoon of ground coffee
2 teaspoons of dark brown sugar
1 tablespoon of black pepper, coarsely ground
1 teaspoon of smoked paprika
1 teaspoon of ground cumin
1 cup of chocolate stout
1 teaspoon of hot red pepper flakes
½ a cup of beef stock
1 spring of thyme
1 tablespoon of unsalted butter
1 tablespoon of vegetable oil
To prepare the dish you will firstly require mixing the salt, coffee, peppers, paprika and cumin and toast the mixture lightly till fragrant. Mix these spices with the sugar to make the rub. Spread the rub all over the Cowboy Ribeye Steaks and let it rest for a while. If you do this procedure a night before cooking, the taste will be better.

Then, heat a cast iron pan till it is very hot. Add the vegetable oil and wait for it to heat up. Then, place the steak in the pan. The steak should sizzle and while it does, do not touch it for three to four minutes. After it starts to brown a bit place the steak under the broiler and broil till the steak reaches your desired level of doneness. After that, remove the steak and let it sit on a warm plate, covered with an alumimium foil.

Add the spring of thyme to the pan and let it saute till it gets fragrant. Pour the chocolate stout and deglaze the pan. To this add the beef broth, whisk and reduce it by half over medium flame. Remove the thyme, whisk in butter and season to taste. Slice the steak and drizzle it with the sauce. Serve hot with hash browns, dinner rolls, creamed spinach, potato mash or a big bowl of salad. This dish is to die for.
