You will love these fruity beef stew dishes. The mild sweetness of fruits married to the well and earthy flavors of herbs and vegetables added a zest of life to the old and customary taste of beef stew. Apples, apricots, dates, raisins, prunes or dried plums are responsible for the large portion of fruit flavors in these recipes. Perhaps the ingredients sound unusual, but once you are successful with your first one, you will realize it is not that hard to do.

Beef Casserole with Fresh Fruits

Ingredients

2 tablespoons of olive oil
1 kg lean beef, diced
2 large onions, thinly sliced
2 medium carrots, peeled and sliced
3 garlic cloves, crushed
1 tablespoon tomato paste
1 tablespoon-heaped flour
1/2 teaspoon chili powder
1 lemon zest plus 1 tablespoon juice
1 1/2 cups beef stock
½ cup plum jam
Fresh celery or parsley, chopped
Mashed potato
Directions

Preheat the oven to 170°C. In a large ovenproof casserole, heat the olive oil over a medium heat. Add the beef; cook until brown. Transfer the browned beef into a plate then set aside.

Immediately add the onion to the pan and cook, stirring for 1-2 minutes. Add the carrots, garlic, tomato paste, flour and chili powder, stirring to combine thoroughly. Add lemon rind and lemon juice, beef stock and plum jam. Add a little liquid just enough to cover the meat. Season and allow to boil. Place inside the preheated oven and cook for 2 hours. Embellish with the celery or parsley and serve with the mashed potato. 

Beef Stew with Dried Fruit

Ingredients

2 lbs lean beef, cubed
1 cup of red wine
salt and pepper
a few sprigs of fresh thyme
1 large onion, chopped
1 tablespoon olive oil
1 cup beef broth
1 cup combined dried fruits (apples, cherries, apricots, and/or prunes)
2 cups assorted vegetables, chopped (carrots, turnips, parsnips, etc.)
1 tablespoon cornstarch (optional)
Directions

The night before, season the meat with salt and pepper and marinate in the wine. Nestle the thyme sprigs on the meat. Refrigerate.

When it's time to cook, prepare your pressure cooker. Heat the olive oil using the cooker and saute' the onion until translucent. Add the marinated beef including the wine and thyme. Add the broth then screw on and lock the lid. Cook at 15 pounds of pressure for 8 minutes. Add the fruits and vegetables then bring back up to pressure for 2 minutes. When done, use your pressure cooker pot to simmer until liquid has thickened. Serve with rice, mashed potatoes, or bread.
