It is Cinco De Mayo this week, and I have a healthy Flank steak salad recipe for you today that is muy bien for your family's Fiesta. Remember to get your ingredients from good sources - local, organic, grass fed meats, and try to buy the highest quality food that fits your budget. I know it does get expensive, but your body knows the difference.
Ingredients
FOR THE STEAK MARINADE:
 Flank steak2 Pound (Grass fed flank steak or skirt steak)
 Oranges, juiced
 Red pepper1 Tablespoon, crush
 Cumin1 Teaspoon
 Chili powder1 Teaspoon
 Jalapeno, finely dice
 Garlic cloves, mince
FOR THE SALAD DRESSING:
 Cold pressed olive oil2 Tablespoon (cold pressed extra virgin olive oil)
 Garlic cloves2 Tablespoon
 Cilantro1 Cup (16 tbs)
 White balsamic vinegar1 Cup (16 tbs)
 Sea salt1 Teaspoon
 Black pepper1 Teaspoon
 Lime, juiced
FOR THE SALAD:
 Baby arugula2 Cup (32 tbs)
 Cherry tomatoes1 Cup (16 tbs)
 Cucumber1 Cup (16 tbs), chop
 Avocado, slice
Directions

GETTING READY
1. Place the grass fed flank steak in a vessel and drizzle the juice of 2 oranges over it.
2. Mix all the ingredients of the marinade together over the beef and place in a ziplock bag. Keep this aside to marinade for 30 minutes.

MAKING
3. Once the steak is done marinading, place it on a hot grill and grill both sides until the desired consistency is achieved. Let it rest for a few minutes before slicing it.
4. Once rested, slice the steak along the grain.
5. For the salad dressing: In a vitamix, add the cold pressed extra virgin olive oil, garlic cloves, cilantro, white balsamic vinegar, sea salt, black pepper and juice of 1 lime and blend together well until smooth.
6. In a bowl, add the baby arugula, cherry tomatoes and cucumber and toss.

FINALIZING
7. Plate the salad first.
8. Add the sliced avocado over it. Drizzle some of the salad dressing on top.
9. Place the sliced pieces of steak over the salad.

SERVING
10. Serve as a treat on Cinco De Mayo.
