Last weekend I decided to cook some chicken on my grill and as usual, I always make extra. This time I wanted to make a simple grilled chicken, using some basic ingredients. I began with bone-in breast and thighs, and seasoned them with salt, pepper and garlic. I then rubbed the chicken with olive oil and placed the meat on the grill. I cooked the meat until it was nice and golden and then finished the chicken in the oven.

After eating that evening, I put my leftover chicken in plastic bags and placed the chicken in my freezer for another day. A couple of days passed when I decided that a nice soup would be real good for lunch. I wanted something quick, but also very fresh and tasty. I removed my grilled chicken from the freezer and let it thaw.

After thawing my chicken, I chopped some yellow onion, celery and carrot. I quickly sauteed my vegetables in a sauce pan until they were clear and translucent. I then added 3 cups roasted chicken stock that I got from the store. This can be found in plastic cartons in the soup aisle, if you can't find the roasted stock, the regular chicken stock or broth will work fine. I let my stock and my vegetables simmer together for about 10 minutes.

As the soup was starting to come together, I quickly cooked some ready- rice that I also found at the store. These little pouches are great and will cook your rice in the microwave in 90 seconds. I added my cooked rice to my stock and simmered for another 10 minutes. While the rice was simmering, I started to separate my chicken meat from the bone. I chopped the meat into nice chunks and added it to my soup. I could now start to smell the freshness of all the flavors coming together.

At the very end, I took a pinch of salt and a pinch of black pepper and put it into the pot. I also added some dried tarragon. The tarragon is the secret that makes this soup so incredible. It has such a unique flavor that no other herb has. When it is combined with chicken it makes this soup come to life.

I love the fact that I was able to take some grilled chicken from days back and make a completely different dish in no time. This soup was quick, easy and very fresh, not to mention healthy. I hope you get a chance to give this recipe a try.
