Recipe for Grilled Chicken Salad with Spicy Peach Sauce

What You Need 

1 can peach halves and juice 15 ounce
¼ cup red wine vinegar
2 Tablespoons raspberry vinegar
2 Tablespoons chopped cilantro
½ teaspoon sea salt
¼ teaspoon pepper
1/8 teaspoon ground habanera pepper
3 boneless skinless chicken breast halves
½ small thinly sliced red onion
2 bags rinsed baby spinach leaves 9 ounce
1 cup milled toasted pecans or walnuts
3 ounces crumbled blue cheese
How to Make It

Using a food processor you will add the peach halves and juice, red wine vinegar, raspberry vinegar, chopped cilantro, sea salt, pepper, and ground habanera pepper. Process until the mixture is smooth. Set aside until needed.

Place the chicken breast halves in a gallon size zip lock food bag and then add ¾ cup of spicy peach sauce into the bag. Seal the bag and shake. Place in the refrigerator for 2 to 6 hours to chill.

About 10 minutes before preparation time soak the onion in ice water and then drain. Set aside until needed.

You will grill the chicken over the direct heat of hot coals.

Preheat a grill for direct grilling, medium heat. Drain the marinade from the chicken and discard the remaining marinade. Grill the chicken breast halves on both sides until they are done or browned and firm to the touch.

Using a large serving bowl you will add the baby spinach leaves, milled toasted pecans or walnuts and crumbled blue cheese and the remaining spicy peach sauce. Toss well to combine. Slice the grilled chicken in strips or chunks and then arrange them on top of the spinach salad.
