I have been grilling meat for almost 35 years, and I never get tired of eating a well cooked piece of meat hot of the grill. After all the various meats that I've eaten, I think I know a thing or two about what types of meat can be perfect for grilling. In this article we will only be discussing grilled foods. We will leave the study of barbecued meat, such as pulled pork, ribs and brisket for other articles.

Beef: It's whats for dinner. In my mind, nothing beats a juicy sizzling steak hot off the grill. Different cuts that I have enjoyed are Strip Steaks (New York or Kansas City, same thing), T-Bones, Porterhouse, Rib Steaks, Filet Mignon, Sirloin and the Skirt Steak. Properly seasoned with salt and pepper, grilled up nice and medium rare, these can't be beat when you need to eat red meat. Also, there is nothing wrong with the simple hamburger, grilled to perfection. All these selections of beef are perfect for the grill.

Chicken: A chicken, grilled perfectly is a wonderful thing. all parts of the chicken are good for grilling, except for the neck pieces, the innards (which are good for throwing away), and I suppose the feet. I've never grilled the feet! Rub the chicken with a good spice mixture, cook it slowly over medium low heat until done, apply barbecue sauce of your choice if you desire, and there you have it, a wonderful dinner.

Pork: The other white meat! Grilled pork is very, very tasty for the carnivore. My favorite cut of pork for the grill is a Pork Steak. If you have never heard of a pork steak it means two things. First, you are not from St. Louis. Second, you have missed out on some fine eating. I have written other articles on the preparation of the pork steak, so we will not go into that here. Also, pork chops on the grill are very good, and don't forget the barbecue rib, which is a piece of pork usually smoked though, and not simply grilled. There is an entire art to smoking ribs that will not be gone into here. They are great eating though.

Exotic meats: There is a new trend in meat grilling. Carnivores are now eating Buffalo meat (also called Bison), Alligator, Ostrich, Kangaroo, Rattle Snake, various types of game animals and game birds. these exotic meats are grilled much like beef, pork and chicken, and have a slightly different taste, but still delicious when prepared correctly.
