Add potatoes and cook, stirring occasionally, until potatoes are tender and beginning to brown.

In a medium bowl, combine eggs, milk, salt, and pepper and beat well. Pour into a skillet with vegetables. Cook, stirring occasionally, until eggs are scrambled and set. The total costs for this meal is only $5.18. It's simple and easy to make, and saves you not only money, but time in the kitchen as well. Get the children off to a good start with Breakfast Sandwiches.

Tip of the Day:

For an easy and inexpensive breakfast on the run, you can make a sandwich out of any cooked egg mixture. Scramble up an egg or two, add some cheese and chopped tomatoes, and wrap it in a corn or flour tortilla. English muffins make good breakfast sandwiches, filled with a fried egg and a bit of crumbled cooked sausage.
