The vein is located on the back of the shrimp, which is opposite from its legs. Using a small, sharp knife, shallowly slice the shrimp in the center of its back. From here, you should be able to see the vein and gingerly lift it out with your knife or fingers. Running the shrimp under cold water while you complete this step usually helps remove the vein cleanly. If you decided to leave your shell on, use a pair of kitchen shears to cut through the back of the casing and follow the same steps to remove the unwanted innards. From there, you are finished cleaning your shrimp! Be sure to store your prepped shrimp in cold water until you use them- this will ensure they stay fresh and consumable.

When you are ready to cook your shrimp recipe, bear in mind that shrimp have a very quick cook time, and if overdone, their consistency may feel a bit rubbery. No matter the cooking method, shrimp should only cook a few minutes on each side, or until the shrimp has lost its transparency and taken on a pink hue.
