One of the most popular foods you can make with a couple of pounds of ground beef is meatloaf. All you have to do is add a few ingredients to the meat and pop it in the oven. While it's cooking, you can prepare a quick salad. The leftovers will make really great sandwiches for lunch.

Here's the recipe for this quick meatloaf:

2 pounds of lean ground beef, 1 can of tomato soup, 1 yellow onion that's been finely diced, 1 cup of rolled oats, 2 beaten eggs, 1 tablespoon of steak sauce, 1/2 cup of ketchup and 3 tablespoons of prepared mustard.

Preheat the oven to 350 degrees. Prepare a 9x5-inch loaf pan with cooking spray.

In a large bowl, combine all of the ingredients and, using your hands, or a large spoon, mix it up really well until everything is blended.

Place the meatloaf mixture into the pan and press down. Bake the loaf for 1 hour or until it is lightly browned. Let it stand for 5 to 10 minutes before serving.
