Running a successful restaurant requires key ingredients. One of these ingredients is preparation. Having motivated staff that comes in before service to prepare the ingredients, portions the meats, readies the lines with little or no supervision is so important. It's also important that every food item that can be prepared ahead of time such as soups, some harder meets, sauces, seasoning, and dressings be done in advance of a business lunch or dinner service.

Preparing food is all about timing. Two minutes per side, orders going out, bread being warmed, moving food from the hot oven to the warm one, and running out of an ingredient in the middle of a dinner service can throw anyone off his or her paces. Customers expect the same food, flavours, textures and taste every time and cooking that dish 30 seconds too long in the hot oven can lead to unwanted consequences: an unhappy customer, no return visits, or even a bad review. A break to the steady pace of food preparation, will throw the chef off his paces. Supporting the randomness of different orders, customer's preferences, allergy and gluten requirements, and customers in a hurry to catch a show, in a condensed 4 hour period of time for a dinner service is a gruelling, demanding task.

To help with preparation you need a repeating system. At the end of the night, your staff should take note of every ingredient that needs to be replenished, have an accurate number of the available meat counts, remaining soup and salad portions, cheese portions, "charcuterie" portions, etc. The staff should also note restaurant items that are in short supply from food items to other more general items required in the day-to-day running of a restaurant. A system must be in place so that ingredients are ordered and replaced, and purchases made in a timely manner so that the restaurant staff can do its job effectively. By having this system in place, staff coming in knows exactly what needs to be prepared and where to focus their attention. Over time, you can even tailor the staff's start time to the amount of preparation that is required the next day.

Having a good repeatable process of being prepared is very important to running a successful restaurant business. It is one of the key ingredients to a successful business. And having staff supported by management, restaurant staff that is prepared with all the prep work completed, is a restaurant where you will taste the difference in each dish that you taste.
